德国的面包文化可算世界上最丰富之一,德国国家面包协会的官方面包名录列出超过3000种,并且连面包卷也有不同地域称呼,如北部的Brötchen和南部的Semmeln。5月5日荷兰纪念1945年从德国占领下解放时,德国则庆祝“德国面包日”,显示面包如何嵌入日常语言与身份中(例如将工作间食称为Pausenbrot,晚餐称为Abendbrot,巴伐利亚人称为Brotzeit)。

Germany has one of the world’s most diverse bread cultures, with the national bread register listing over 3,000 types and even regional roll terms such as Brötchen in the north and Semmeln in the south. On May 5, while the Netherlands marks liberation from 1945 occupation, Germany marks a Day of Bread, showing how deeply bread is embedded in daily identity and language (for example, Pausenbrot for a work lunch and Abendbrot for dinner, with Bavarians adding Brotzeit).

The sector is highly institutionalized: the bread institute names a Bread of the Year (currently rye), appoints a bread ambassador, and the Weinheim baking academy certifies a “bread sommelier.” Since 2000, the children’s TV figure Bernd das Brot has remained a major cultural symbol, and his recognition spread to the United States after a John Oliver appearance.

At the same time, the industry is under clear pressure: the number of bakeries has dropped 59% since 1998 to just under 9,000, while industrial bakeries outcompete independent shops amid rising energy and ingredient costs, taxes, bureaucracy, and skilled labor shortages. Supermarkets are gaining share, the most common purchase is now prepackaged sliced bread, and fresh bread prices rose 40% between 2019 and 2023, nearly double the overall inflation rate.
