Chile’s cherry industry has grown into a multi-billion-dollar export machine, supplying roughly half of global shipments and sending about 90% of its fruit to China, where it now earns more than lithium. A record crop last season and an expected 131 million boxes (655,000 tons) this season were later cut to about 110 million boxes (550,000 tons) after bad weather, exposing how sensitive prices are to oversupply and timing around Lunar New Year.

Facing choosier Chinese consumers, growers are shifting from volume to strict quality metrics: cherries must exceed 28 millimeters in diameter, contain more than 18% dry matter, show a deep mahogany color and keep long green stems. Moving up a size grade can add about $1 per kilogram, but early-season airfreight oversupply and soft or undersized fruit have depressed prices, damaged Chile’s brand and turned varieties like Nimba, which sold at roughly half the price of rivals, into cautionary tales.

To protect margins, the industry is investing in coverings, fungicides, greenhouses and staggered plantings, while refining logistics such as 23-day sea shipments and premium “Cherry Express” routes.
