Thousands of years of domestication have dramatically reshaped fruit: modern peaches are 16 times the size of their ancient ancestors, watermelons now span 1,200 varieties, and many modern fruits have become sweeter by reducing acidity and bitterness rather than simply adding more sugar. CRISPR now pushes that targeted modification further and with greater precision, allowing breeders to delete single genes to produce seedless blackberries, stoneless cherries, and other traits that are harder to achieve through conventional breeding.

The technology is advancing at different speeds across crops: apples and peaches often take several years to bear fruit from an altered seed, while tomatoes and strawberries need only a few months, making them the most advanced so far. Commercial milestones have already appeared, including a higher-GABA Japanese tomato sold in 2021 and tomatoes made up to 30% sweeter in China in 2024 by disabling genes that limit sugar production.

Market data suggest that more convenient and appealing fruit can materially lift demand: fresh blueberry imports into America grew ten-fold from 2000 to 2020, and seedless easy-peel mandarins raised the value of the entire U.S. citrus market by roughly a third in the four years after year-round availability began in 2012. Regulation is also moving in a supportive direction, with Argentina becoming the first country in 2016 to treat gene-edited products like conventionally bred ones, and the EU reaching a provisional deal in December 2025 to simplify marketing rules and remove special labeling requirements for plants made with new genomic techniques.
